Skinny Soup Diet

This is my first hub with you guys, and I do have some much to share when it comes to dieting; really a confusing subject since there are so many options, promises and gimmicks. After years of creating diet Web sites, and “practicing” on myself, I came to the conclusion that only eating healthy and in small portions, is the key to a healthy, slimmer and younger person we all want to be. I wanted to start my first Hub with the Mediterranean Diet, since I’m the author of Mediterranean Dieting, but somehow I got side tracked by Dr. Oz’s T.V. show, where he talked about dieting with soup, and he called it “The Skinny Soup” what a coincidence because I’m working on a book of recipes for Soup Dieting, adapting some of my Mediterranean Soup and Salad recipes to this version of the Cabbage Soup Diet. I do like the new name I learned “The Skinny Soup Diet” (I love Dr. Oz, and all his health tips)

The Soup Diet Explained

Let me explain a little about why the Soup Diet works and the different options you have to follow this diet successfully. Have you heard about “negative calorie foods” we all know that all foods have calories, so what does this really mean? Simply, that there are certain foods which our body uses more calories to digest than the calories contained in the food; meaning, that the digestive system has to work harder in order to absorb the calories from these foods, turning them into fat-burning foods, thus the term “negative calorie foods”

Negative calorie foods contain enough vitamins and minerals to provide for enzyme production in sufficient quantities to break down its own calorie content, to convert these calories into energy, but additional calories which affects your rate of metabolism in a positive way.

Soup Dieting will not only give you delicious soup recipes based on the concept of “negative calories foods”

Check my next hubs for delicious soup recipes, list of “negative calories foods” and benefits of ingredients.

Mediterranean Style Cabbage and Vegetable Soup

This is a delicious and heart warming soup, that is easily made with any vegetables that you have on hand, feel free to improvise.

4 Servings, double the ingredients if you want to make for 2 days. Calories per serving: aprox. 45-50 calories.
Ingredients:

•1 onion, chopped

•2 garlic cloves, finely chopped

•1 teaspoon virgin olive oil

•2 small carrots, sliced

•1 cup of green beans, chopped

•2 medium tomatoes, chopped

•3 cups of chopped cabbage

•1 cup of chopped celery

•8 cups of water

•Sea salt and pepper to taste

After serving, garnish with a tablespoon of parsley or cilantro, chopped finely.

Preparation: In a large saucepan, heat oil over medium heat, sauté onion until starting to turn brown. Add tomatoes and continue to cook for a few more minutes, stirring frequently. Add all remaining ingredients, and bring to a boil, reduce heat and simmer partially covered for 25 to 35 minutes.

Many recipes for Cabbage soup in the internet calls for seasoning with bouillon cubes, V8 juice, or soup mixes. Do not consider any of these options for seasoning, as they are high in sodium and will cause you to retain water. Nothing like natural seasoning! The recipes here are part of my cooking experience and adapted from my book Mediterranean Dieting which you can find in Amazon.
